Kale, Potato & Sausage Soup!

This soup is not only super tasty, it is super easy and quick to make! I probably made it in about 30-45 minutes the other night. Our time is priceless, but eating good food is so worth it.

This is supposed to be kind of a spicy soup, so if you like spicy I would recommend using a spicy sausage, I however am a spice wimp, so I use mild sausage!

Ingredients
  • Kale (could substitute spinach if you can't find any kale)
  • 5 large potatoes
  • 1 pint of heavy whipping cream
  • Milk
  • Italian Sausage (Mild or Spicy)
  • One Diced Onion
  • A few cloves of garlic
  • Salt

Dice up your potatoes, into small bite sized pieces, and start boiling in water ( i usually throw in a clove of two or garlic in with them).

In large pot, on medium heat, add sausage, diced onion and one or two whole smashed cloves of garlic.

While the sausage is cooking, slice up the kale.
When the potatoes are cooked, strain and set aside.

Make sure and let your sausage get all nice and browned and tasty!
Then add the Pint of Heavy whipping cream, potatoes and kale. Add enough milk to make it a good soup consistency.

Keep heat on low, let simmer for about 10-15 minutes, or until you are too hungry to wait! While simmering, salt to taste. The kale doesn't need to be fully cooked, it's nice to have it still a little firm.

(Don't Let It Boil! if it does, don't worry it will still taste good)

Enjoy!

Infinite Designs First Birthday

HAPPY BIRTHDAY INFINITE DESIGNS

Well on Saturday March 21st we celebrated our 1 year anniversary, we had a yummy homemade chocolate birthday cake and tons of food (we happen to be known for our tasty event food)!

We had friends, long time customers and some new artists stop by for some food and fun. It was a great opportunity to see how far we have come. We started out one year ago, and our shop has really come together over the last year. It is so nice to hear other people say how beautiful our store is and how great it feels when you walk in the door.

I am so proud of US!

We have come so far, added new items to the shop,
but we still have our Comfy Purple Couch & The Giant Mushroom Lamp!
Hope we have another great year ahead of us!

Here are some pictures of the store...

Yummy Tasty Chicken Mock-Sausage !

This was something my friends made spur of the moment the other night. They saw it on a cooking show, and then we made it again Sunday night and I thought I would share it. It is something that is easy, healthy and fun to make. The Chicken tastes so good, because it is cooked with all it's juices. It is moist and quite Yummy!

Ingredients For Say 4 people
  • Chicken Breasts 4
  • Butter
  • Spinach ( one package)
  • Garlic 2 cloves
  • Onion 1/2 of an onion

Sauce
  • Butter
  • Wondra or Flour
  • White Wine 1 cup
  • Chicken Stock 1 cup
  • Tomatoe

I'm not one for exact measurments, i'm a pinch of that and dab of butter kind of girl ;) And it totally depends on how many people you are cooking for too.

First pound out some Chicken Breasts. Figure about 1 breast per person.

Then Saute in a pan onions, garlic with butter once they have cooked (onions translucenty) add the Spinach. You don't want to over cook the spinach, just so that it's just blanched :) Set aside in a bowl. You can salt or season the spinach mixture just a bit too!

Now Comes the fun part!

Lay out a piece of saran wrap, and I'd highly suggest using the "Good" brand ie the one from CostCo or SaranWrap Blue and Yellow box :) Make sure it is longer than the chicken breast so you can tie knots in it.

Put a bit of the spinach mixture on the chicken...

And then Start Rolling it up. Try and keep it tight as possible.

Once it's rolled, Tie a Knot in each end.

The Larger or Wider the chicken breasts are the better/prettier they turn out...Ours this time we kind of small so you can see some of the spinach, but not to worry it will still taste just as good. :) But something to keep in mind if you are making it for a dinner part or something.

At some point before you start rolling up your chicken,
get a deep pan with a lid started with some water boiling.

Once your water is "just boiling" carefully drop the Chicken in the water.
Cook them in the boiling water w/ the lid on for about 11 minutes.

While the Chicken is cooking you can start your sauce, Melt a little butter in your pan (you can use the pan from the spinach), sprinkle Wondra on to make a Rue, let it brown, then add your wine and chicken stock, salt or season to taste.

We like to add some diced tomatoes to the sauce, makes it fresh and tasty!

After They are Cooked...
Remove them from the water and cut off the End, and Pull/Slide the Saran Wrap off.

Slice like Sushi....

Then Serve with Sauce and Enjoy!

Hope you enjoy, or get inspired,

~Jeanette
